“Ratafia is made from the Riesling pressings (after the free run is taken for the dry table wine), where the ferment is killed/stopped with a hit of neutral spirit leaving a high level of residual sugar (read sweetness) that finishes clean and dry, due to the level of alcohol imparted by the spirit – think fruit syrup with a vodka shot! It is essentially a fortified late harvest Riesling so will keep, if refrigerated, for weeks after opening. Served with fruit desserts it takes on amazing dimensions, due to its initial overt sweetness and richness but clean, lingering finish.”
Eden Hall 2006 Ratafia Riesling
The 2006 Ratafia Riesling is a pale yellow golden colour with a distinctive toffee apple nose with hints of fairy floss. The generous palate of rich, mouth filling fruit with golden syrup characters, trails on to a lingering, cleansing finish. Serve chilled and best enjoyed a little at a time over several sittings.
